Who knows why such a variation hasn't evolved? Why haven't red daisies evolved or humans with antlers? We don't know all of the answers of why nature has produced the variety that it has. There are some theories that some flowers colors evolved because of pollinators and others to advertise their toxicity. Try searching on "flower color evolution" to see what you come up with.
