Something you have not considered, Jway, is that many people do not really know what science is. Fwiw, the same could be said of religions too.
So, when I see a definition of science that is incorrect (having studied science for many years), I dismiss it. It's not agenda driven - other than to seek truth.
The wiki definition is great. Other than to muddy the waters with our own personal interpretations and feelings about science, I don't see why we need to look for a definition beyond this.
