How does this work?

I ran across this water-powered clock over at
ThinkGeek.com and was disappointed by the description of how it works.

And why wouldn't something like this work on a larger scale?

Thanks

I'm guessing, but I'll bet its that the metal from the wires leaches into to the taters through the reaction, and the metal may contain lead and other nasty things you really don't want to consume.
